Ingredients
• Sweet Chilli Infused Salmon (1 fillet / 120 to 140g)
• Olive Oil (1 tbsp)
or
• Raw Salmon (1 fillet / 120 to 140g)
• Olive Oil (1 tbsp)
• Garlic Granules/Powder (generous sprinkling)
• Soy Sauce (1/2 tsp)
• Sweet Chilli Sauce (1/2 to 1 tbsp)
Instructions
1) Place the salmon skin side down on a chopping board, season and marinate if not using pre-marinated salmon
2) Attempt to cut the salmon into 5 pieces, you will unlikely be able to cut through the skin, but this is fine, cut through the salmon until the knife reaches the skin
3) Heat the oil in a pan on medium heat
4) Once the pan is hot, place the salmon skin side down and start the stopwatch timer. Cook for 1 minute, then turn over to cook for a further 30 seconds
5) Now start to break the salmon apart, using the tong
6) Keep turning the salmon pieces, until every side has been charred. As it cooks it will be easy to break it into smaller pieces. Keep turning and breaking, to ensure it cooks evenly until the timer reaches 5 minutes. The salmon is cooked when there are no translucent pieces.
Notes
• The salmon on its own is not a complete meal. It can be served with ‘Homemade Potato Wedges’ and vegetables such as cooked peas (80g) or salad (80g) or for an even quicker meal served with mashed avocado (80g) and toast (2 slices of wholemeal bread) with an additional vegetable source (80g)
• If you are serving with homemade potato wedges, prepare this before the salmon, and start pan frying the salmon just before the potato wedges are halfway through their cooking time cooked so that they can be cooked and served hot at the same time
• You can use any flavoured pre-marinated salmon of your choice (make sure it is uncooked), or coat fresh raw salmon with 1 tbsp of sweet chilli sauce, garlic powder, and 1/2 tsp soy sauce. Please see the ‘Simple Sweet Chilli Salmon’ recipe for further information.
• If your oil spits, briefly remove it from the stove burner and turn down the stove heat, then resume cooking
• If the salmon does not resemble ‘donner’ and is softer, this can be resolved by extending the cooking time by a few minutes and/or cooking at a higher temperature, otherwise it can be enjoyed at a softer texture.
